GREASE INTERCEPTORS
Grease Interceptors are required on all restaurants, commercial kitchens, hospitals, prisons, airports, and every type of food service establishment (FSE).
Their purpose is to remove the grease, oil, and food solids (FOGs) from the kitchen waste stream. Without a grease interceptor, grease would quickly build up in the drainage piping leading from the restaurant to the city sewer. Grease buildup results in backups, clogs, and sanitary sewer overflows (SSOs).
Nationally, grease from restaurants, and other food service establishments, is the number one cause of sanitary sewer overflows.
Grease interceptors are a critical component in keeping city sewers operating as designed. It is important that all grease interceptors are sized, installed, and maintained properly.
